One-Pan Beef Enchiladas

This 20-minute recipe from Maebells makes for an easy weeknight meal that’s light on dirty dishes. To boost the antioxidant quotient and add a pop of color, layer with chopped tomatoes, peppers and green onions.

    One-Pan Beef Enchiladas

  • ground beef or 453 grams

  • 1 can black beans rinsed and drained

  • 1 recipe Homemade Enchilada Sauce

  • 6 corn tortillas cut in half then sliced into thin strips

  • 1 cup cheddar cheese grated

Directions

  • Brown ground beef in a large skillet over medium heat. Drain off grease.

  • Add the rinsed and drained black beans and homemade enchilada sauce ingredients. Enchilada sauce can be made right in the pan; no need to whip it up separately.

  • Stir mixture well, cover and reduce heat to low. Let simmer for 10 minutes.

  • Add sliced tortilla strips, stir well, top with cheese and cover. Let mixture simmer 5–10 more minutes until cheese is melted.
