Creamy chutney spread takes this turkey apple sandwich, courtesy of The Salt Solution Cookbook, from ordinary to exciting. Serve with a piece of fruit for a complete brown bag lunch. If you don’t have chutney on hand, substitute 1 tablespoon of apricot jam and a pinch of curry powder.

Ingredients for servings


  • 1 tablespoon chutney

  • 1 tablespoon reduced-fat sour cream

  • 1 teaspoon fresh lemon juice

  • 4 slices thin-sliced 100% whole wheat bread

  • 0.5 cup fresh baby spinach

  • 3 ounces cooked unsalted sliced turkey breast

  • 1 sliced reduced-fat swiss cheese


  • Finely chop any large chunks in the chutney. Stir together the chutney, sour cream, and lemon juice in a small bowl until combined. Spread the chutney cream on 2 slices of the bread. Top each with the spinach, turkey, cheese, apple, and remaining bread slices. Cut in half to serve
