Slow Cooker Chicken Tikka Masala

This is a great slow-cooker dish that comes together pretty easily. It’s super flavorful with healthy spices like ginger, turmeric and cumin. Feel free to substitute chicken breast instead of thighs.

    Slow Cooker Chicken Tikka Masala

  • skinless chicken thighs

  • 1 can lite coconut milk

  • 1 can diced tomatoes

  • 1 tablespoon fresh ginger grated

  • 2 tablespoon garam masala

  • 1 tablespoon ground turmeric

  • 1 tablespoon ground cumin

  • 2 cup cooked brown rice

Directions

  • Place chicken, coconut milk, diced tomatoes, ginger and spices in a slow cooker; stir to combine. Cook on high for 4 hours or low for 8 hours. Serve over brown rice.
