Chicken & Spinach Orzo-Dinner In Under 30 Minutes

1 large onion halved and sliced

0.25 cup dry sherry or chicken broth

3 tablespoon currants or raisins

1.5 cup shredded, cooked chicken breast from rotisserie chicken

8 cup packed spinach torn into pieces

0.25 teaspoon salt
uncooked orzo or 8 ounces
-
0.25 cup toasted pine nuts or slivered almonds
-
0.25 cup shaved fresh Parmesan cheese
Chicken & Spinach Orzo–Dinner In Under 30 Minutes
Directions
Heat oil in a large nonstick skillet over medium heat. Add onion; cook, stirring occasionally, 15 minutes or until onions are golden brown.
Stir in sherry, currants and chicken. Add spinach. Cover with lid and cook for 3 minutes, tossing occasionally with tongs until spinach wilts. Stir in salt.
Cook orzo in boiling water for 8 minutes or until tender; drain. Toss together drained orzo and spinach mixture. Sprinkle with nuts and cheese. Serve immediately.
