Sweet Potato Chocolate Chip Waffles

    Sweet Potato Chocolate Chip Waffles

  • 0.5 cup mashed sweet potato from 1 small sweet potato

  • 0.75 cup plain unsweetened kefir

  • 2 large eggs

  • 2 tbsp maple syrup

  • 0.25 cup coconut oil melted

  • 2 tsp baking powder

  • 0.5 tsp salt

  • 1 tsp cinnamon

  • 0.5 tsp nutmeg

  • 1.5 cup gluten-free all-purpose flour

  • 0.25 cup dark chocolate chips

Directions

  • Preheat a nonstick waffle iron, coated with cooking oil, to medium heat. Microwave sweet potato until fork tender, about 8 minutes. Cut in half and scoop out the flesh.

  • Mash the sweet potato and measure out 0.5 cup (100g). Place in a large bowl and allow to cool slightly.
  • Add kefir, eggs, maple syrup and coconut oil to the bowl and whisk to combine.

  • Stir the baking powder, salt, cinnamon and nutmeg to the wet ingredients and whisk to combine. Add the flour, stirring just until incorporated. Once all ingredients are fully mixed, fold in the chocolate chips and mix well, making sure there are chips throughout the batter.

  • Spoon the batter onto the waffle iron, making sure the batter covers the grates entirely.

  • Waffles are cooked when the waffle maker indicates or once a golden brown crust has formed and waffles can be easily removed from the waffle maker.

  • Serve with maple syrup or your favorite toppings.
