PARMESAN + CHIVE FRITTERS

Frivolous fritters made from cooked quinoa, shredded parmesan, chives and almonds are a delicious alternative to meaty patties. The Honour System‘s fritters are versatile and can serve as the appetizer, main entree or side dish in a meatless meal. Pair with a side salad for extra fiber!

Ingredients for servings

    fritters

  • 2 cups cooked quinoa (certified gluten-free if necessary)

  • 0.66 cup shredded parmesan

  • 3 tablespoons ground almonds

  • 0.25 cup chopped chives

  • 1 large egg lightly beaten

  • 0.25 herbamare or herb spice blend of choice

  • to taste fresh cracked pepper

  • 2.5 tablespoons olive oil

Directions

  • Place all ingredients, except for the oil, into a large bowl and mix with hands until well combined. Form six 0.25 cup fritters, wetting hangs if necessary.
  • Heat oil in a large pan over medium heat. Cook the fritters three at a time. Flip after about five minutes. Be careful when flipping as they are a tad fragile. Cook for another five minutes, set aside, then cook the last three fritters.

  • Sprinkle with extra parmesan and chives if you like.
