Hearts of Palm Salad With Shrimp and Avocado

This simple meal-worthy salad from Eating Bird Food is packed with protein, thanks to shrimp, and comes together in less than 20 minutes. It’s light, fresh, perfect for warm-weather and can be easily customized with your favorite dressing.

Ingredients for servings

  • 2 cup spring mix or your favorite leafy green)

  • 0.25 cup hearts of palm sliced

  • 0.25 cup cherry tomatoes chopped

  • 1 tablespoon red onion chopped

  • 0.5 avocado sliced

  • 0.5 tablespoons fresh cilantro chopped

  • Shrimp

  • 10 or 12 shrimp peeled and deveined

  • to taste salt

  • to taste pepper ground

Directions

  • Season shrimp with salt and pepper. Grill for 6 minutes total, flipping after 3 minutes.

  • Add greens to a bowl and top with grilled shrimp, hearts of palm, cherry tomatoes, red onion, avocado and cilantro. Top with 2 tablespoons of your favorite dressing.
