Ingredients for servings

    Tortillas

  • 4 small Corn Tortillas approx. 50 calories each

  • baked egg

  • 4 ounces educed-sodium deli Ham

  • 0.25 fresh Red Bell Pepper, chopped

  • 0.5 fresh Jalapeño seeded and chopped

  • 2 tablespoons shredded Cheese

  • 2 large Eggs

Directions

  • Preheat oven to 400 F.

  • Spray a baking sheet with cooking spray, lay two tortillas down, top with peppers, ham, and cheese, top with remaining tortillas, carefully crack egg over top.

  • Bake for 10-12 minutes.

  • Enjoy with salsa, sour cream, or avocado.
