Chocolate Chip Gingerbread Blondies

Ingredients for servings

  • Blondies

  • 6 tbsp ghee (can use butter or coconut oil) 2

  • 2 tbsp molasses 1

  • 0.25 cup cassava flour 1

  • 1 tsp cinnamon 1

  • 0.5 tsp baking soda 0.5

  • 0.5 tsp salt 0.25

Directions

  • Preheat oven to 350ºF (177ºC). In a medium mixing bowl, mix the ghee until softened. Add the eggs, molasses, and vanilla and mix to combine. Add the cassava flour, spices, baking soda, baking powder and salt and mix until well combined. Stir in chocolate chips.

  • Grease a 7×5 baking dish and pour in the batter. Bake for 18–20 minutes until a slight crust forms on top and a toothpick comes out clean. Let cool for 10 or 15 minutes, then slice into 12 pieces.
