3 large zucchini spiralized

1 spiralized chopped

1 pint grape tomatoes quartered

1 cup cucumber chopped

0.33333333333 cup red onion chopped

3 tablespoons apple cider vinegar or lemon juice

0.25 cup olive oil

1 teaspoon Dijon mustard

1 teaspoon maple syrup optional

0.5 teaspoon onion powder

0.5 teaspoon dried thyme

0.5 teaspoon dried oregano

0.5 teaspoon dried basil

Directions
Add zucchini, bell pepper, tomatoes, cucumber and red onion to a large salad bowl.
In a separate small bowl, whisk together dressing ingredients.
Pour dressing over salad and toss to combine. Taste and add additional salt and pepper if needed
