Zucchini Noodle Spaghetti Salad

Ingredients for servings

    Salad

  • 3 large zucchini spiralized

  • 1 spiralized chopped

  • 1 pint grape tomatoes quartered

  • 1 cup cucumber chopped

  • 0.33333333333 cup red onion chopped

  • dressing

  • 3 tablespoons apple cider vinegar or lemon juice

  • 0.25 cup olive oil

  • 1 teaspoon Dijon mustard

  • 1 teaspoon maple syrup optional

  • 0.5 teaspoon onion powder

  • 0.5 teaspoon dried thyme

  • 0.5 teaspoon dried oregano

  • 0.5 teaspoon dried basil

  • 0.5 teaspoon pepper

  • 0.25 teaspoon sea salt

Directions

  • Add zucchini, bell pepper, tomatoes, cucumber and red onion to a large salad bowl.

  • In a separate small bowl, whisk together dressing ingredients.

  • Pour dressing over salad and toss to combine. Taste and add additional salt and pepper if needed
