    Strawberry & Spinach Salad with Rotisserie Chicken

  • 2 cup strawberries hulled and halved or quartered

  • 1.5 tablespoon white wine or apple cider vinegar

  • 1.5 tablsepoon honey

  • 1.5 tablespoon low-fat Greek yogurt

  • 2 teaspoon chia seeds

  • 1 teaspoon minced shallot

  • 0.25 teaspoon Dijon mustard

  • 1 pinch salt

  • 2.5 tablespoon mild olive oil

  • 8 cup baby spinach

  • 2 cup shredded rotisserie chicken breast skin and bones discarded

  • 0.25 cup toasted sliced almonds

Directions

  • Finely chop one strawberry and place it in a small mixing bowl. Add the vinegar, honey, yogurt, chia seeds, shallots, mustard and salt and whisk until everything is well combined. Gradually whisk in the olive oil in a slow, steady stream.

  • Divide the spinach among four shallow bowls. Top with the chicken, strawberries and almonds. Drizzle salads with dressing and serve.
