HARVEST SALAD WITH CREAMY PUMPKIN BALSAMIC VINAIGRETTE

Wondering what to do with your jar of pumpkin pie spice? You’ve been there, you’ve baked that so why not use pumpkin pie spice to make a creamy pumpkin vinaigrette dressing courtesy of Love & Zest. This harvest salad smothers crispy greens, pecans, apples, cucumbers, and so much more in a drizzle of dressing that evokes the aroma of fall: pumpkin spice!

Ingredients for servings

    For the dressing (makes 8 servings)

  • 0.5 cup Extra Virgin Olive Oil

  • 0.25 cup thick Balsamic Vinegar

  • 0.25 cup plain 1% Kefir

  • 0.25 cup Water

  • 1 tsp Agave Nectar

  • 0.25 tsp Pumpkin Pie Spice

  • Salt and freshly Ground Pepper to taste option

  • For Salad (makes 2 servings)

  • 1 cup Greens

  • 1 cup Romaine Lettuce

  • 2 tbsp Red Onion diced

  • 8 Pecan halves

  • 0.25 Gala Apple cored and thinly diced

  • 2 tbsp dried tart Cherries

  • 0.25 cup diced English Cucumber

  • 2 tbsp Gorgonzola Cheese, crumbled

Directions

  • In mason jar place all ingredients for dressing. Top mason jar with lid and shake until combined.

  • Layer salad individually in two separate bowls. Top each with equal, 0.5 cup servings of each ingredient.

  • Serve with approximately 2 tablespoons pumpkin dressing!
