Date, Pumpkin Seed, Almond And Oat Bars

Nothing says fall like these easy vegetarian energy bars made with crunchy pumpkin seeds. Chopped dates add natural sweetness while peanut butter and oats rounds out the texture. Try packing it for a snack or pre-workout fuel.

Ingredients for servings

    Date, Pumpkin Seed, Almond and Oat Bars

  • 1 cup Quaker Instant Oats plus a handful of extra oats

  • 1.25 cup chopped dates

  • 4 tsp pumpkin seeds

  • 4 tsp sliced almonds

  • 5 tsp sliced almonds

  • 2 tbsp peanut butter

Directions

  • In a large bowl, mix oats, dates, pumpkin seeds, almond slices and peanut butter. Combine until well mixed. Shape into a square dough.

  • Sprinkle some oats on the surface, flip the dough and sprinkle some oats on the other side. Use a rolling pin to roll the mixture to 0.5 inch thick. Cut it into 4 even bars or your chosen form.
