Clean Three-Bean Salad

Simple but delicious, this three-bean salad from The Honour System is especially great as a healthy side at a barbecue or potluck. Good for carnivores and vegetarians, the beans offer a solid dose of fiber and protein per one-cup serving. Any three-bean combo will do, and if time allows, using dried beans is a good way to watch your sodium.

    Clean Three-Bean Salad

  • 3 can beans rinsed and drained ,try kidney, black and garbanzo beans

  • 1.5 bell peppers thinly sliced

  • 0.5 red onion thinly sliced

  • 1 cup salsa

  • 3 garlic cloves minced

  • 0.25 cup cilantro chopped

  • 0.25 cup white vinegar

  • 0.25 cup apple cider vinegar

Directions

  • Place the beans, peppers, and onion in a large bowl and toss. In a mason jar (or the salsa bottle) combine the remaining ingredients and shake well. Pour dressing over the bean mixture and toss until well combined. Cover and refrigerate for at least an hour.
