Chipotle Black Bean Nachos With Greek Yogurt

Nachos are usually a dietary disaster, but they don’t have to be. In this version, a base of oil-free baked chips cradles smoky, spicy black beans, creamy avocado and a tangy topping of Greek yogurt. Make them in the microwave, at home or at work, for an almost instant meal full of healthy fat and 17 grams of protein.

    Chipotle Black Bean Nachos With Greek Yogurt

  • 0.5 cp canned black beans rinsed and drained

  • 0.25 tsp chipotle powder

  • 1 tsp lime juice freshly squeezed

  • 18 baked tortilla chips

  • 0.25 avocado diced

  • 0.25 cup plain, 0% Greek yogurt

  • 1 scallion chopped

Directions

  • Place the beans in a small bowl and mash coarsely, add the chipotle powder and lime and stir to mix. Spread the chips on a large dinner plate in a single layer. Sprinkle bits of the black bean mixture over the chips, making sure every chip gets some beans. Microwave the chips and beans for 45 seconds on high.

  • Sprinkle the hot chips with avocado, small dollops of yogurt and scallions. Serve immediately.
