Broccoli Citrus Salad

  • 6 slices thick-cut bacon

  • 4 c broccoli florets

  • 0.5 c avocado diced

  • 0.75 c red onion diced

  • 0.25 cup dried tart cherries or raisins

  • 0.25 c pecans roughly chopped

  • dressing

  • 0.33333333333 c mayo

  • 0.33333333333 c 100% orange juice

  • 1.5 tablespoons honey

  • 1.5 tablespoons ground Dijon mustard

  • to taste Salt

  • to taste pepper

Directions

  • Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper; arrange bacon evenly spaced on the baking sheet. Bake for about 25 minutes until fully cooked and crispy. Remove bacon from pan and drain on paper towels soaking up any drippings. Once the bacon has cooled, roughly chop, then set aside.

  • In a large bowl, mix together broccoli, avocado, onion and raisins.

  • In a small bowl, whisk together mayo, orange juice, honey, mustard and salt and pepper.

  • Pour dressing over broccoli mixture and toss to coat. Garnish salad with bacon and pecans. Serve at room temperature or slightly chilled.
