Big Green Smoothie Bowl

Place chicken, coconut milk, diced tomatoes, ginger and spices in a slow cooker; stir to combine. Cook on high for 4 hours or low for 8 hours. Serve over brown rice.

    Big Green Smoothie Bowl

  • almond milk

  • 1 banana

  • Heaping handful of spinach

  • 1 cup frozen mango chunks

  • 1 scoop plant-based protein powder

  • fresh kiwi, goji berries, coconut flakes, cacao nibs and chia seeds Optional toppings

Directions

  • Toss all ingredients together in a blender. Process and pour blended mixture into a bowl, add preferred toppings and serve.
